My Approach
I am driven in my cooking by simplicity and the ability to rely on nature supplying the finest produce - you can't beat eating the first asparagus, broad beans or morels after a long winter.
Organic food and the Slow Food movement confirmed my passion for seasonal produce and whilst representing the UK at the Terra Madre in Turin in 2008 I was heartened to meet so many like minded lovers of food, chefs and producers alike.
I love food that is grown at home, harvested and cooked with my family. The menus I have written reflect what I like to eat but I look forward to creating a menu based on your seasonal favourites.
